This version of chicken cacciatore is a semi-traditional recipe that I have created to my tastes. I really enjoy a more tomato sauce like base.
Cut chicken into bit size pieces.
Chop onion, mushrooms, celery and bell pepper into bit size pieces.
Put flour, salt & pepper into large ziplock.
Add chicken and shake.
Dump into large holed collander and shake off excess flour.
Heat butter in large skillet.
Brown chicken and remove from pan.
Saute onion until browned.
Add mushroom and cook until soft.
Add celery and cook for a until soft
Add bell pepper, tomato sauce, oregano and garlic.
Add small amount of sugar to cut sharpness.
Return chicken to pan.
Bring to simmer and cover.
Cook for 30 min.
