Angel hair pasta in a light sauce made from tomato & basil served cold. Great for lunch on hot summer days.
Cook pasta according to instructions on box.
In large skillet, heat olive oil.
When hot, add garlic & sautee till fragrant (30 sec)
Add diced tomato and heat until water is released.
Simmer until most of the water is gone & desired texture is achieved.
Remove from heat.
Add Basil, salt & pepper.
Set aside to cool and thicken for about 5-10 minutes.
Toss with pasta.
Garnish with cheese.
Serve at room temperature.
